A seasonal vegan healthy snack that are nutritious and delicious when you are craving something a little sweet. They have the benefit of freezing beautifully as well. I like to add lots of pumpkin spice for extra fall flavor.

Yield: approximately 2 dozen energy bites
Ingredients:
- 2 cups pitted medjol dates
- 2 cups extra thick rolled oats (I love bobs red mill)
- 1/2 cup toasted walnuts
- 1/2 cup canned pumpkin
- 1 tablespoon tahini
- 2 tablespoons pure maple syrup (a little more or less to taste)
- 2 tablespoons chia seeds
- 2 tablespoons ground flaxseed
- 3 teaspoons pumpkin spice
- 1 teaspoon cinnamon
- 2 teaspoons pure vanilla
for rolling :
- 1/4 cup chia seed
- 1/4 cup shredded coconut
Instructions:
In a food processor, pulse pitted dates into smal chunks. Add toasted walnuts, oatmeal and and remaining dry ingredients including spices. Process until all ingredients are quite fine. Next add the pumpkin purée, maple syrup, tahini and vanilla and process until mixture becomes a dough.
Take a couple of tablespoons in the palm of your hand and roll into a ball. Mix the chia seed and coconut together in a medium shallow bowl. Roll the energy balls in the coconut chia seed mixture. Refrigerate for an hour before eating and enjoy!
Store the energy bites for a few days in refrigerator or in a ziplock in freezer for a month.
