These healthy no bake bites are delicious and easy to make. You can use your favorite nuts and fruit for this recipe. Depending on the type of butter you use, you may need to adjust the amount as some of the natural butters are less creamy than others. I prefer the peanut butter flavor but I love tahini or almond butter as well. I used a regular peanut butter when making these bars. Perfect snack when you are craving a little sweet.

Ingredients:
- 2 cups mixed nuts
- 12 ounces pitted dates
- 1/2 cup dried blueberries (substitute your favorite apricots, cranberries or raisins )
- 1/4 cup chia seed
- 1/4 cup ground flaxmeal
- 1/2 cup peanut butter (substitute almond butter or tahini)
- 3 tablespoons honey
Directions:
In a food processor, place nuts, chia seed and flaxmeal in the bowl and process until very finely chopped. Add the dates and dried fruit and pulse until very finely chopped and well incorporated. Next add the peanut butter and honey. Continue to process until mixture gathers in a moist texture. (Depending on whether you use peanut butter or almond butter or another substitute, you may need to add a bit more or less than half a cup).
Take a 15 x 12 inch piece of parchment paper and place mixture on top. Gently spread it out as evenly as possible. Take another piece of parchment paper the same size and lay on top of mixture and using a rolling pin, roll out the bars into a large rectangle about 12 inches by 9 inches. The edges may be a bit ragged, but you can even them out with your fingers. Transfer parchment to the fridge and allow to solidify for around 30 minutes. Cut the cooled dough into squares.
Store your bars in the fridge or freezer in ziplock bag. They are delicious cold or at room temperature. Enjoy!
