These bars are so easy and healthy with the addition of protein powder, flaxmeal, hemp and creamy peanut butter for a delicious, healthy snack. You can substitute almond butter if you prefer and select your favorite dried fruit. So easy!

Healthy, delicious and easy!!!!

Ingredients:

  • ½ cup water
  • 1 cup peanut butter
  • ½ cup maple syrup or honey
  • 1 cup unflavored whey powder
  • 2 cups uncooked oatmeal (I love Bob’s Redmill)
  • 1/2 cup chopped nuts
  • 1/2 cup flaxmeal
  • 1/4 cup chia seeds
  • 1/4 cup hemp
  • 1 cup dried blueberries (substitute chopped dates, raisins or other favorite dried fruit)
  • 2 tsp cinnamon

Directions:

In a medium saucepan, combine all ingredients except oats, dried fruit and nuts. Stir over low heat until well combined and warmed through. Remove from heat. Add remaining ingredients and stir until all ingredients are well incorporated adding a bit of water if too thick to stir (this will depend a bit on the type of butter you choose), but mixture should be thick and not watery.

Press evenly into pan and 8X8 non stick baking pan using your hands to compress mixture into an even bar thickness. Cover with plastic wrap and refrigerate. Once bars are cooled, cut into squares. Keep refrigerated and wrap in air tight container and keep chilled in the refrigerator. Enjoy!!
