Love making these cookies at Christmas time. they are rich and fudgy and so delicious. These will satisfy the chocolate lovers in your orbit!

Ingredients:
for cookies:
- 1 cup all-purpose flour
- 6 Tbsp Dutch process unsweetened cocoa
- 1 tsp (5 g) baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 4 oz unsweetened chocolate, chopped
- 6 Tbsp unsalted butter, cubed
- 3/4 cup granulated sugar
- 3/4 cup light brown sugar
- 2 large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 1 tablespoon espresso powder
- 1/2 cup semisweet mini chocolate chips
- 1/2 cup granulated sugar
- 1/2 cup powdered sugar
for rolling:
- 1/2 cup (100 g) granulated sugar
- 1/2 cup (60 g) powdered sugar
Instructions:
Preheat oven to 350F and line two baking sherts with parchment paper.
Whisk together flour, cocoa powder, baking powder, baking soda, and salt in a medium bowl. Combine chopped chocolate and cubed butter in a microwave-safe bowl and microwave on high for about 30 seconds. Remove and stir and continue microwaving in 15 second intervals until melted and smooth (about 90 seconds total).
In a separate bowl, whisk together sugar, brown sugar, espresso, vanilla and eggs in a large bowl for 1 minute until well incorporated and about doubled in volume. Add warm chocolate mixture and whisk for 30 seconds until smooth. Fold in flour mixture just until incorporated and no flour streaks remain. Stir in mini chocolate chips. Allow the dough to stand at room temperature for 5 minutes.
Place granulated sugar and powdered sugar in separate shallow bowls. Take about 2 tablespoons of dough and roll in the palm of your hand. Drop the balls of dough in granulated sugar and roll to coat, then coat generously in powdered sugar. Place two inches apart on prepared baking sheets.
Bake cookies for about 12-minutes until cookies are puffed and cracked, with edges set. Let cookies cool for several minutes on baking sheets then transfer to a wire rack to cool completely.
Store cookies in an airtight container at room temperature. Enjoy!
