Love this easy delicious dinner that packs your plate with great flavor. Serve with a great salad and enjoy a wonderful healthy meal.

Ingredients:
- 1 lb. large shrimp, peeled and deveined
- flour for dusting
- 2 Tbsp. extra virgin olive oil
- 2 tbsp. unsalted butter
- juice of 1 freshly squeezed lemon
- 1 onion, finely chopped
- 7 garlic cloves, finely chopped
- 1 small red pepper, small dice
- kosher salt and freshly cracked pepper to taste
- 12 ounces fresh spinach
- 1/4 cup dry white wine
- 2 cups chicken stock
- 1 cup dry orzo pasta
Directions:
- Place shrimp in a bowl and toss with flour, salt and pepper to absorb any excess moisture.
- Heat oil in a large 10-12 inch skillet over medium heat. Add shrimp and sear on each side until almost cooked through, about 4-5 minutes, turning once. Transfer to a plate and tent with foil to keep warm.
- Add butter to pan, along with onion, bell pepper, garlic and chili flakes to same skillet. Season with salt and pepper. Sauté until aromatic, about 3 minutes and turn the heat to medium high. Add in orzo and allow grains to toast for 1 to 2 minutes. Add white wine and broth, bring to a simmer until grains are al dente and most of liquid is absorbed (about 12 minutes).
- Stir in fresh spinach and add shrimp back into the pan, turn off heat and cover for about 2 minutes to wilt spinach and finish cooking shrimp. Add fresh lemon and stir to distribute and drizzle with olive oil, enjoy!!!
