If you are looking for a higher protein, lower carb pizza, this one works so well. Also good for your gluten free diners. You can add whatever toppings you want and it bakes in the oven. The whole thing comes together in about 90 minutes. Happy cooking.!

Ingredients:
- 1 lb ground chicken
- 2 large eggs
- 1 1/2 cups grated parm (plus more for topping)
- 1 cup panko
- 3 teaspoons oregano
- 1 teaspoon ground garlic
- Kosher salt, freshly ground pepper
- 4 Tbsp. all-purpose flour, divided
- Olive oil for drizzling
- 1½ cups favorite tomato sauce
- 8 oz. mozzarella ( I love the pearl mozarrella)
- Basil leaves, fresh chopped cherry tomatoes, crushed red pepper and extra-virgin olive oil (for serving; optional)
Directions:
Preheat oven to 425°. Cut two pieces of parchment paper to fit a 9 X 13 inch sheet pan. Place the ground chicken on one sheet of parchment and place the second sheet on top, then roll out chicken evenly until vit covers the parchment with a 1 inch border around sides. Carefully and slowly peel off top sheet of parchment and set aside
Whisk 2 large eggs in a small bowl. In a separate bowl, combine panko and Parmesan together.
Season the flattened chicken generously with salt, pepper and garlic powder and oregano.
Generously season top of chicken with salt and pepper. Scatter 2 Tbsp. all-purpose flour over the ground chicken. Use a brush or fingers to spread half of beaten egg on the top. Then scatter half of panko-Parmesan mixture over the chicken. and rub into an even layer to completely coat surface.
Place reserved sheet of parchment on top of chicken, then enclose another sheet pan on chicken and carefully flip the chicken over. Remove parchment paper. Repeat the egg, flour, panko process on the second side with remaining ingredients. Drizzle with a bit of olive oil.
Bake chicken until golden about to 30-35 minutes. Remove from oven and spread homemade sauce over the entire surface of the crust. Scatter mozzarella and extra Parmesan on top. Bake for an additional 15 or so minutes until cheese is melted. or store-bought marinara sauce over. Remove from oven and top with basil leaves, crushed red pepper, chopped tomato and drizzle with extra-virgin olive oil to taste. Enjoy!
